Where Burrata Comes From

The name “burrata” refers to its rich and creamy filling, even though it doesn’t contain any butter, which many people mistakenly believe.
Burrata was created recently in Andria, Puglia. According to a local story, a cheesemaker invented it during heavy snowfall when transporting dairy products was very difficult. To keep fresh cream safe and easy to carry, he wrapped it inside mozzarella cheese, creating what we now call burrata.

How Burrata Is Made

Burrata is a fresh cheese made using the pasta filata technique, which means the cheese curds are stretched and pulled. It is usually made from cow’s milk, but there are also versions made with buffalo milk.

The process starts by making a thin outer shell of mozzarella, shaped into a small pouch with a twist at the top. Then, some of the same curd is shredded by hand and mixed with fresh cream to create the filling, known as stracciatella. This mixture is placed inside the pouch and sealed quickly by hand. The result is a cheese with no rind, a smooth white surface, and a soft, creamy center.
Since 2016, Burrata di Andria has been protected by PGI status (Protected Geographical Indication), which helps preserve its origin and traditional method of production.

How to Use Burrata in the Kitchen

Burrata is loved for its high quality and unique flavor. It appears on menus in Italian restaurants all over the world and is a true symbol of authentic Italian food.
