The unmistakable flavour of Parmigiano Reggiano is closely tied to its homeland. We produce it using artisanal methods in our two cheese factories in the hills of Reggio Emilia: the Colline di Selvapiana e Canossa cheese factory, registered under number 417, and the Colline del Cigarello e Canossa cheese factory, registered under number 320.
Obtained from semi-skimmed milk, this is a semi-fat hard cheese with a fine grainy texture. It is enclosed in a hard and smooth rind.
The steps for producing this cheese, which boasts ancient origins, still follow the same natural methods today, although with the implementation of modern technologies in order to meet the highest quality and hygiene standards.
Produced using only sheep’s milk from the area of origin in Sardinia, it comes in two different types, young (dolce) and aged (maturo), which differ in their processing techniques, ageing and organoleptic properties.
Spinoro is a 100% Made-in-Italy hard cheese, made with milk from Italian dairy farms located in the heart of the Po River Valley, without the use of preservatives or additives and using microbial rennet, which makes it vegetarian-friendly.
Pastamore is a hard cheese, made using pasteurised cow’s milk and microbial rennet, which makes it vegetarian-friendly.

Thanks to our experience and to our desire to listen to our customers, we have developed a range of 8 grated cheese blends which differ from each other in taste, in their properties as condiments and in their performance, capable of satisfying every need in terms of browning, stringy effect, grate-ability and seasoning ability.
